YIELD: 8 ENCHILADA CASSEROLE
COOKING TEMP: 350F PORTION: 3/4 cp
COOKING TIME: 30 min COOKING PAN: 13 x 9 x 2 pan
INGREDIENTS AMOUNTS PROCEDURES
| Vegetarian burger : 1 pt 1. Saute vegetarian burger, onion, and
| Onions chopped : 1/4 cp garlic in oil.
| Garlic minced : 1/4 ts 2. Add salsa, drained squeezed
| Oil : 2 Tb spinach, tomato sauce, tomatoes,
| Salsa : 1 1/2 cp chopped red pepper, lime juice and
| Spinach chopped : 1 cp salt. Simmer uncovered 15 minutes,
| Tomato sauce : 1 cp stirring occasionally.
| Tomatoes chopped : 2/3 cp 3. Arrange half of tortillas on bottom
| Pepper red chp : 1/3 cp and sides of lightly greased baking
| Lime juice : 1 Tb pan, overlapping as necessary.
| Salt : 1 1/2 ts 4. Top with half the vegetarian burger
| Tortilla corn : 12 mixture. Arrange remaining
| Cream sour : 1 cp tortillas on top.
| Cheese jack shredded : 3/4 cp 5. Spread sour cream evenly over
| Cheese cheddar shred : 3/4 cp tortillas. Top with remaining
| Olives sliced : 1/2 cp burger mixture.
|. 6. Bake at 350F about 30 minutes or
until hot and bubbly. Remove from
oven; sprinkle with cheeses. Let
stand 10 minutes; cut into squares
to serve.
7. Garnish with sliced olives.
